In Puglia, friselle have been a staple for centuries — twice-baked until perfectly dry, then softened with a splash of water and piled high with ripe tomatoes and good olive oil. These are made the same way they always have been, using local barley flour and Senatore Cappelli — a rare ancient wheat variety prized for its nutty depth of flavour and superior nutrition, virtually extinct until recently revived by small Apulian producers.
